Very rich and well-defined Cabernet with fine, sweet oak support in its deep and outgoing, keenly cassis-like aromas and very much following suit on the palate, this full and fleshly effort is wonderfully supple in feel, and, while fit with a solid foundation of structural tannin, it steers clear of abrasive astringency. It promises very positive development for no fewer than another half-dozen years, its combination of full-on Napa Valley richness and oh-so-inviting winemaking polish is sure to tempt drinking now.

This is a new producer to me, and the vibe here is new school Napa, with forward, almost jammy fruit, a dose of heat, and a “drink-me-now” style that has legions of fans. A rich, generous wine, this one hits all the expected markers for top-of-the-line Cabernet and does it in a style that reaches for the edge of classic limits yet never goes beyond them because its fruit is absolutely deep and compelling, extremely well-focused and runs from first sniff to lasting aftertaste of currants, black cherries, cola and creamy, slightly caramelly oak. Its ripeness may bother those who want tight structure and high minerality, but the rest of us will be more than happy to take their share and drink some up in the next few years while letting the rest of our Stardust stash age in our cellars for up to a decade.
Michael Dellar has always been about quality. As a restaurateur, he has brought some of the food and wine experience to the world. The 2014 Stardust Cabernet Sauvignon is a classic beauty. TASTING NOTES: This wine is well-built and stays long and loving on the palate. Its aromas and flavors of black fruit and tantalizing oak accents should pair superbly with an artfully grilled well-marbled ribeye. (Tasted: April 23, 2019, San Francisco, CA)

Substance and solidity are the hallmarks of this dense, yet nicely rounded, full-bodied opus, and, while not at all lacking in varietal authority or structure, it shows a fair bit of polish and is as mannerly as it is rich. It is supple and fleshy in feel with exceptionally fine palatal length, and its neatly placed tannins provide a proper sense of Cabernet grip without imparting so much astringency that its enjoyment hinges on a long stay in the cellar. We would not pour it now, but neither would we wait for 10 years, and it promises to make lovely drinking some three to five hence.
